This coffee blend brings together Juan Heredia Sanchez's La Flor and La Loma farms, along with Luz Nelly Alarcon's Perlamayo farm, meticulously chosen by exporting partner Alpes Andinos in Peru. These three farms, representing the Flor del Norte lot, are located in the Huabal region. Juan and Luz, both part of the Alpes Andinos cooperative, have a history of success in the Cup of Excellence competition. Selective tree pruning maintains crop quality, while the innovative 'Zoca' method ensures plant rejuvenation. Soil analysis guides organic fertilizer application in March and November, with coffee pulp and 'guano de las Islas' contributing to nutrient-rich soil. Harvesting spans from July to October in the Hubal region, with tried-and-true processing techniques passed down generations. After hand-picking, cherries are floated in water, fermented, and pulped. Three washes follow to remove mucilage, and beans are air-dried on raised beds for approximately 25-30 days, depending on weather conditions. This meticulous process results in outstanding coffee flavor and quality.
We do a consistent weekly roast to ensure we can provide you with the freshest coffee. In addition to that, we are committed to provide coffee that are within 14 days of the roast date.
All our coffee beans are roasted on the FROCO FR15-I. A machine that gives us a ton of information like the ability to track temperatures of the beans, drum, and airflow just to name a few. This means we obtain and are able to monitor with a lot of information to ensure we can roast coffee with a high level of consistency.
We pack our whole beans coffee and ground coffee in a 250g airtight packaging. With a smaller packaging, it'll help to keep the coffee fresh and it prevents exposing a large amount of coffee to the environment which can change the flavours of the coffee.
We don't use any flavourings in our products/coffee. What you see on the packaging and our website are taste notes, our ways of depicting nuances of flavours in the coffee beans. So don't worry if you don't get the taste notes, as every taste buds bring a slightly different outcome.
