Ethiopia has become a household name for being one of the biggest coffee-producing countries in the world, not that surprising considering it is the place where coffee was discovered way back during the 9th century.
Grown in the renowned Yirgacheffe region of Ethiopia, our Yirgacheffe Halo Berity comes from a collection of smallholder producers in the microregion of Halo Berity. As a family crop, it's common to find coffee grown in the gardens of people’s homes here, often intercropping with bananas, avocados, and papayas for additional food sources.
The coffee which is grown and harvested by the local farmers is sent to be processed at the Nenke Washing Station. The 8km journey to the station is done either on foot, with a donkey, or on a motorcycle. When the coffee reaches the washing station, it is immediately sorted to remove any overripe and underripe cherries ensuring only the ripest cherries go into the next step which is the fermentation stage where the coffee will undergo a 48-72 hours ferments to remove the entirety of the fruit from the seed. The coffee then is put on a raised bed to be dry in the open sun.
It's common to find coffee from Ethiopia with the varietal labelled as “Heirloom”, which is a blanket terminology that masks the plethora of coffee varieties that are native to the country. The Local Landraces 74110 was developed in the late 1960s by Ethiopia’s Jimma Agricultural Research Centre (JARC).
Our Yirgacheffe Halo Berity has a floral quality akin to cherry blossom supplemented with the fruity notes of raspberry and the sweet, subtly tanginess of roselle.
We do a consistent weekly roast to ensure we can provide you with the freshest coffee. In addition to that, we are committed to provide coffee that are within 14 days of the roast date.
All our coffee beans are roasted on the FROCO FR15-I. A machine that gives us a ton of information like the ability to track temperatures of the beans, drum, and airflow just to name a few. This means we obtain and are able to monitor with a lot of information to ensure we can roast coffee with a high level of consistency.
We pack our whole beans coffee and ground coffee in a 250g airtight packaging. With a smaller packaging, it'll help to keep the coffee fresh and it prevents exposing a large amount of coffee to the environment which can change the flavours of the coffee.
We don't use any flavourings in our products/coffee. What you see on the packaging and our website are taste notes, our ways of depicting nuances of flavours in the coffee beans. So don't worry if you don't get the taste notes, as every taste buds bring a slightly different outcome.
